Overnight Pumpkin Oatmeal

Overnight Pumpkin Oatmeal
1 can (15 oz) pumpkin
water
2 cups steel-cut oats (do not use regular or quick cooking oats)
1/4 t. salt
2 t. cinnamon
1 t. ground ginger
1 t. ground nutmeg

Spray crock pot with cooking spray. (A lot less oatmeal will stick to the sides if you spray it well.)
Combine canned pumpkin with water until all the pumpkin is well blended and the total volume measures 8 1/3 cups. Pour into crockpot
Stir in oats and spices.
Cover and cook on low for 7 hours.

I have substituted applesauce for the pumpkin and it was really good. Other things that can be added are cranberries, dried apricots, raisins, vanilla protein powder, etc. Whipped cream is really good on the pumpkin oatmeal.
